A Better Buffet

Happy Mother's Day to all the Moms out there! I hope everyone has had an enjoyable day!

The weather was spectacular this morning - thanks, Mother Nature! It was sunny, but a little on the cooler side and breezy. Perfect running weather! I was out the door by 8:15 a.m. and ran for 40 minutes. The wind made it a bit tough ,providing some resistance, but I just slowed my pace during those times and that helped me get through it. I came home and was shuffled upstairs by the husband and daughters who wanted to give me my breakfast in bed. I really wanted to stay on track with my eating today, so I kinda dictated what I wanted to eat for breakfast. I know that sounds very type A, but if I didn't, the husband would have made a really elaborate breakfast and I didn't want to splurge that much. I tried not to take the fun out of it for them, but I had to keep my goal in mind of what I needed today. So, I decided on whole grain banana almond pancakes. The husband made them and put a few sliced strawberries on the side. He was disappointed that they didn't come out in "perfect circles" (now, who's type A!) because he knew I would take a picture of them and he wanted them to look really amazing! Aww. I made sure he knew that it doesn't matter what they looked like, they tasted TERRIFIC! I really enjoyed this 3 POINT breakfast in bed...




After I lounged around, I got ready to meet my parents at Gram's new apartment community. We were all going to have brunch in the restaurant there. I wasn't sure what to expect for this. Brunches are notoriously a bad place for those who are trying to make healthy choices! I was pleasantly surprised at what was available. I was able to fill my plate with a bit of Cinnamon Rubbed Pork Loin, mixed green salad, green beans, broccoli and a spoonful of potatoes...


I also had a nibble of my Mom's cheese blintz, cheese strata and little daughter's chocolate cake. I was able to avoid the other hot buffet items and completely avoided the mile long dessert table altogether. Hey, if you don't look at it, you don't really know that you're missing anything, right?!


I also had a few sips of Prosecco (Italian sparkling wine)...

and a nice cup of decaf...


I estimated the whole thing at 10 POINTS. I was happy that I didn't go hog wild and felt satisfied with everything I ate :)



We spent the rest of the afternoon touring Gram's new community, walking the grounds and the husband and daughters even played a little putt golf. It's a beautiful place and was a wonderful afternoon celebrating mothers and daughters...


Later, the husband and daughters wanted pizza for dinner (they could eat it every night!), so I made Veggie and Smoked Gouda Quesadillas for myself. I sauteed baby portabellas, onion and red bell pepper and spinach with cooking spray and filled 2 small La Tortilla Factory Tortillas with the veggies and 2 oz. lite smoked gouda cheese. I used 2 tbsp. marinara for dipping this yummy 6 POINT meal...

Dessert was on the menu, tonight! A repeat of last night - Fudgy Peanut Butter Chip Vitatop with PB2 - gotta love it!

What a great Mother's Day! I got to do the things that are important to me, eat the way that is important to me and be with the people that are important to me! Can't ask for much more than that!

Marisa, you look AWESOME! What a beautiful picture of "all the girls" in your family. I wish I could have seen my mom today. Way to go on staying on track. :)

Awww - it sounds like you had such a fun day! Wow, a 3 pt almond banana pancakge - yum! I think that your husband is cute for worry about the picture - mine would've done the same. Congrats on a successful day!

Marisa, love the "girls" photo. So nice. And can I just say those quesadillas look amazing! Yum. Light smoked gouda, huh? I'll have to get that at the grocery store and give it a try.

Great job on the eating!! I wasn't quite a successful with mine but today is a new fresh week and I am ready to move forward.

Love the picture of the mother's and daughters. I always love to see pictures of the people you talk about so often.

Have a great week! I was so excited yesterday I was able to fine the lite tofu. I only had to search six stores for it. Sigh... But I found it and that is all that counts.

I look forward to each of us support each other on this journey to health and wellness. (and a little skinner too!! :)

What a sweet hubbie to make you breakfast! When I visit my parents, my mom is always conscious of her food presentation for blog photo purposes - the pancakes look great!

The pb chip vitatop with pb icing looks a.mazing.

What a fantastic mothers day! You did such a great job staying on plan with all of the food obstacles!!

Marisa - I forgot to tell you that I made that chocolate cake for my parents for mother's day. I didn't make the glaze (I don't like espresso) so I used a dab of cool whip and but some rasberries on top! It was really pretty good. My parents both enjoyed it.

I think having special days like that when you don't go crazy it makes it easier the next time to stay on track.

I woke up to Dunkin Donuts!!! 5 pts. right off the bat and I was hungry like 20 minutes later!
