A Snappy Day

Beautiful morning!  I got an earlier start , so I had time to make up a Banana Oat Smoothie before leaving the house.  This time, I decided to add a big handful of spinach to “green” it up!  I remember trying a “green monster” here and didn’t care for it so much, but this mix was really good!

Then, it was off  to the gym.  I did 50 minutes on the elliptical and 15 minutes of upper body weight work.  I’m surprised at how much I like doing the weights.  I feel so strong and like feeling my muscles doing their work!

I had lots of house stuff on the agenda today, so I came home and got to work.  Lunchtime rolled around quickly and I have been excited to try out a recipe for Chickpea Croquettes with Greek Salad Topping in the latest issue (Oct.)of Vegetarian Times Magazine

s21 009

The only “hard to find” ingredient in this recipe was chickpea flour.  Surprisingly, I was able to find it in the natural foods section of my local Giant Supermarket under the guise of garbanzo bean flour (which is the same thing – some say tomato, some say toemotoh - heehee)…

s21 004

I prepared the greek salad topping first and swapped reduced-fat feta cheese for the vegan feta since I had it…

s21 005

then, prepared the croquette batter…

s21 008

and cooked them in a nonstick skillet for about 8 minutes total.  The result was nothing short of amazing!

Go get the October issue – it’s worth it just for these patties!!

Since I was in the house all day, I felt like eating.  Something about being all alone with this…

s21 014

But, I kept it in it’s cage.  I felt very proud of myself for that because I must have gotten it out about 3 different times to drool over look at it :)  Instead, I satisfied my craving with 2 of  Trader Joe’s Dark Chocolate Crisps

Dinner was simple.  Everyone around me is sneezing, snotting and sore.  The husband and daughters have colds and were feeling yucky, so I scrapped my original dinner plans and made them breakfast for dinner.  They were so snappy (that means snotty, sneezy happy)!  Yeah, I should probably check my temperature, too ;)  Anyhoo, I decided to not eat with their germy selves and waited til later to have a quick dinner, too.  Per the suggestion of my friend, Rosemary, I made a Lavash Bread pizza using Joseph’s Lavash Bread, some leftover marinara and light shredded cheese…

s21 001

It was great and huge, but for very little calories compared to regular pizza.  One whole Lavash Bread is only 100 calories!  I paired it with some leftover Italian-style Squash.  Delish!

s21 003

I’ll definitely be making that again!

I’m off to spray myself down with Lysol.  Have a great one!

ONE GOOD THING:  I resisted cake this afternoon!!  I consider this a miracle :)

Question of the Day:  What make you feel better when you’re sick?

Yesterday must have been the day for miracles because I was able to resist chocolate oreo cake at a work party. I'll have to try to remember how I did that and keep doing it.

That pizza looks delicious. I'm going to have to try making one.

Hope you don't get the bug and the rest of the family feels better soon.

Yay for resisting the cake !

When I feel sick the thing that makes me feel better is playing music that I love !

Tea and toast and curling up on the couch watching tv.

When I was little, the only time we were allowed to watch tv non stop was when we were sick and my mom would bring us a cup of "milk tea" and toast with lots of butter.

I think spinach in the green monsters are key (kale is bitter to me) yuck! lol

OMG I need to find that Joseph’s Lavash Bread NOW! I want that pizza bread! When I went to Trader Joes the other day I check the NI on their lavash-110 for only 1/2 of it! YIKES! That is a great idea to make pizza bread with that!! THANKS!

Good job on keeping the cake under its cage! lol :)

Stay healthy over there! Hope your house full of sickies feel better soon! ( I lol @ your lysol comment!)

Andrea - I could totally see you making these! I think you'll love them!

Enz - I loved milk tea when I was little/sick, too!

Christina - sheer torture!

TJ - yeah, kale was gross in it! I got the Lavash at BJ's Wholesale Club. It's the only place I've every seen this brand. I've eyed up the one at TJ's many times, but I wasn't thrilled about the nutritionals either!

Pizza looks SO good! Yum!!! Good for you on resisting the cake... i'm not much of a cake person, but put some type of crumble or something in place of that and i'd be doomed! ;) Lol!!

Everyone around here seems to be catching colds, etc.. too.. must be in the air! ;)

I'm liking that pizza from today. You've got will power b/c I don't know if I could be in a room with a cake like that. I try not to keep anything like that in the house. occasional brownies but that's it.

A good cup of coffee, or a bowl of warm soup always perks me up!

That lavash bread pizza looks AMAZING! And so does the chickpea croquette! How interesting is that?!

Wow. The recipe you followed turned out great. The little cold bug is floating around. Hope you don't catch it from your family and hope your hubby and daughter get well soon.

I've seen those chocolate covered TJ Crisp before. They were sampling it once and it literally flew off the shelves.

I didn't even know they "make" chickpea flour! What a unique recipe. I'd really like to experiment more with vegetarian cooking.
I think I've said this before, but I love your plates! I love that look.
