Behind The Times

I feel a bit messed up from the time change. I got a late start this morning since it is now dark again. I never feel like getting out of bed when it's like that! I did some things around the house and read a little and before I knew it, it was almost 11 a.m.! Time for breakfast! I wanted another one of the grocery goodies my Mom brought me...







Another low POINT bagel! These are called Kim's Light Bagels . They are made by a woman named Kim Bensen who has lost over 200 lbs. on the Weight Watchers Program. Her story is so inspiring and her bagels are delicious! My Mom picked me up the Everything flavor which is 110 cal., 1.5 gr. fat and 4 gr. fiber which is 2 POINTS. She does make other flavors that are only 1 POINT, too. I had mine toasted and topped with 1 Laughing Cow Cheese Wedge and a sliced orange for 4 POINTS...



For lunch, I made a veggie tofu scramble. Don't say, "eeewwww"! It was really good! I made good use of leftover veggies, too. I took a 1/2 block of Nasoya Lite Tofu , crumbled and sauteed it in a nonstick skillet sprayed with cooking spray. To that, I added some leftover chopped grilled zucchini and leftover roasted potato, peppers and onions. When everything was heated through, I mixed in a slice of 2% cheese until it was all melty. Sooooo veggie-licious for 4 POINTS...



If you're scared of tofu, try it in a scramble. It takes on the consistency of a scrambled egg and really doesn't have much flavor on it's own, so it takes on the flavor of whatever you season it with. A few years ago when I "dabbled" in vegetarianism, I had tofu scrambles all the time for breakfast or lunch. It really is yummy!


I fit in another favorite snack this afternoon: Weight Watchers Strawberry yogurt and THAT Trader Joe's cereal for 2 POINTS...



I finally got around to doing my exercise. Instead of another 5K, I hit the basement for a pumpin 35 min. on the elliptical while reading, Intuitive Eating. I began reading this book a few weeks ago and I have been enlightened by the principles in this book. So eye-opening! My sister from another mister, Angie is currently reading this book also and has been doing some great recaps and self-discovery posts. Check it out; it's so interesting!


Dinner was a family favorite: Philly Cheesesteaks! I made some homemade baked fries ( I love my mandoline!!) and a big salad with Kraft Light Three Cheese Ranch to go with it. A yum-o 9 POINT din din...


After dinner, I "un-intuitively" (it's a word now!) ate 2 Hershey's kisses and another small chocolate that I, um, "forgot" to take a picture of ;D. So, to finish out my dessert, I had some tea and a Weight Watchers Chocolate Chip Cookie ( 1 POINT)...


Not too shabby, today. I feel a little off kilter with the time change, but I like that it is light longer in the evening! I'm off to catch up on that whopping hour of sleep that I lost; hey, every bit counts right?! Have a great night and good zzzz's!!

Not For Beginners

Holy Crap! Level 2 of the Shred is not for beginners. I don't even know if it's for intermediates! What the heck, Jillian???? I thought I might give Level 2 a try today, for something different. Well, it sure was different! OMG, there were these plank exercises and these "walking push-up "things and Jillian was saying things like "bad-asses" and "I want you to feel like you're going to die"!!!!! AAAAHHHH! I thought I might cry half-way through-lol! Um, I think it's back to Level 1 for me. I don't want to die, Jil. Really. I just want to get all sweaty and huff and puff. I'm thinkin that is good enough, right?? Shred Count - 20 more days! -of Level 1 :]



It was a beautiful balmy day today!!! I had the urge to run outside again, but decided to take it "easy" and just do the Shred (which I found was NOT easy!). I was in the mood for a big breakfast, so I made salsa eggs using 3 egg whites, 1/4 c. salsa and 1/2 oz. Cabot's 75% Reduced Fat Cheddar Cheese. I toasted a Weight Watchers Petite Bagel and added a 1/2 oz. of the Cabot's cheese over the top. Yummy, filling and 3 POINTS...







Lunch was the leftover whole wheat eggplant veggie pizza and carrots (6 POINTS)...



My snack was a Fiber One Strawberry Yogurt (these are so good and creamy) and a Weight Watchers Oatmeal Raisin Mini Bar (o.k., but not my fave) for 2 POINTS...


This wonderful weather brought out that summer grillin feeling! I decided on burgers on the grill. The husband and daughters were thrilled! I only had club rolls, so I made the burgers in a rectangle shape instead of round. I used 96% lean ground beef which is awesome and only 3 POINTS for 4 oz. I topped my burger with a slice of 2% cheese, sauteed mushrooms, onions, ketchup and a couple pickles. An amazing 6 POINT burger! Can't have burgers without fries, so I had a side of oven baked frozen fries ( 3 oz. is 2 POINTS) and a side salad with Kraft Light Three Cheese Ranch...



And 2 days without dessert is enough punishment for anyone, so I had my usual Vitatop with PB2. Oh, how I have missed it....



The brownies are.... outta here! Whew! Thank goodness. That is a first for me. I have NEVER not succumbed to brownies. And I do mean brownie with an "s" on the end! I don't need no stinkin brownies; I got my Vitatops and they are waaaaay better anyway. Uh, huh ;]

Dinner And Dessert!

I spent some time this afternoon perusing WW friendly recipes from my vast array of recipe binders (I currently have 4 binders filled with recipes) and cookbooks. It's a sickness, I know, and one that I have inherited from my Mom who has a roomful of cookbooks, recipe binders and past issue cooking magazines. Sorry I "outed"you, Mom!!! While looking through my binders, I came across a recipe for Baked Buffalo Chicken which looked easy enough so that's what I made for dinner tonight. I put chicken drumsticks in a baking dish sprayed with cooking spray, seasoned them with s & p and baked them at 400 degrees for 30 min. While they were baking, I melted 1 tbsp. light butter with 1/4 c. Frank's Hot Sauce and a dash of celery salt. After 30 min., I poured the hot sauce mixture over the chicken drumsticks and let them bake for another 10-15 minutes. I took the skin off of my little guy before adding the sauce, but left the others with skin which got nice and crispy. The family loved it - hooray!! I served mine with a side of carrot sticks and cucumber spears with 2 tbsp. Marie's Light Blue Cheese Dressing for dipping, and also a 3 oz. serving of baked fries. A fun dinner, all for 6 POINTS...



I had plenty of room for dessert (as always!) and thought I would make something special, but didn't get around to it :( So, I took out my yummy Deep Chocolate Vitatop, mixed up the PB2 and then saw this blast from the past in my kitchen cabinet...
Can you see where I'm going with this???? I added 1 tbsp. of marshmallow fluff ( 20 cal., 0 gr. fat = 0 POINTS!) to the PB2 and heated it in the micro for a few seconds until the fluff got melty and mixed with the PB2! I know!!!! This is the best dessert - Deep Chocolate Vitatop with PB2 Marshmallow Frosting...

I'm pretty sure I can save up 2 POINTS to have this every night!

Well, it was a good "on program" day today which is a great thing because the BLBE2 is officially underway! My teammates that have weighed-in today are off to an awesome start; I hope to be right up there with them this Thurs.! GO TEAM ANGIE!
