No Sleep For The Weary

Last night was another rough night, sleep-wise. Little daughter has sleep issues and was up from 1: 30 a.m. til 4:30 a.m. Ugh! The husband and I were zombies today. I actually went back to bed after sending the daughters off to school - I have NEVER done that before, even if I've been sick. This sleeplessness is getting to me, BIG TIME. But no matter how crappy I felt today, I was determined to not let the stress get to me in an eating way!

I didn't start my day off with exercise. I just couldn't muster up the energy. I did make myself breakfast, though. I had a bacon, egg and cheese english muffin sandwich using 1 egg white, a slice of 2% cheese, a slice of center cut bacon and a Thomas' 100 calorie english muffin. I had a 1/2 c. of unsweetened applesauce on the side...


Lunch was one of these new finds...


A yummy spinach souffle that is only 2 POINTS! Just pop it in the micro; it's delish. Along with that, I had an Arnold Sandwich Thin cut up with 2 tbsp. hummus for dipping and a sliced apple...

Bold After lunch, I got myself moving and did a little grocery shopping. I picked up a bunch of Weight Watchers Yogurts on sale. I love that they are only 1 POINT. I had the berries and cream flavor and an oatmeal raisin mini bar for a sweet 2 POINT snack...


Dinner was tacos for the family. I went a little different route; bean and cheese quesadilla. I spread a La Tortilla Factory Tortilla with 1/2 c. fat free refried beans and sprinkled with 1 oz. Cabot 75% Reduced Fat Cheddar. I folded it in half and pan-fried it in cooking spray until everything was all warm and melty. I topped it with some salsa and a tbsp. of guacamole. Mmmm! I had a cup of lentil soup along with it. What a filling 6 POINT dinner...


I found another Weight Watchers product at the grocery store today that I couldn't resist - peanut butter cookies! I had one for dessert topped with 1 tsp. of Nutella (chocolate hazelnut spread )which is the most amazing stuff in the world! I have to hide this in my kitchen cabinets so that I "forget" that it's there or else! The cabinets were getting a little bare, so it was peaking out at me :) I remained in control, thankfully!



This delicious 2 POINT treat was so yummy. It reminded me of a peanut butter blossom cookie (you know, the peanut butter cookie with the hershey's kiss on top)...



Well, I am going to SLEEP now and hopefully, I get to STAY that way until morning! Nighty nite =)

Rush,Rush,Rush!!

I have been running(not in an exercise way) since early this morning! I woke up extra early so that I could fit in my workout - yay, me- before going with big daughter on an all day field trip to a cool museum. I was rush, rush, rushing because big daughter begged that I not be late - I'm trying to get better with that! So, breakfast was short and sweet. A Banana Date Breakfast Cookie and some Eggnoggin Tea - to go...

Before I left, I had to pack my lunch for the field trip. I thought a wrap would be a good thing. I finally found a suitable replacement for the other store brand tortillas that I was using and my store discontinued. These wraps are called La Tortilla Factory Smart and Delicious. They sure are! Each tortilla is 80 cal., 3 gr. fat, and 12 gr. fiber. Also, 1 Point. Yipee...


I made a wrap with 2 oz. turkey, a handful of baby spinach, slice of center cut bacon and a tsp. Kraft Light Three Cheese Ranch Dressing. I also brought an apple and bottle water. Perfect and not too sloppy!



We had to wolf this down in a nanosecond since the teachers had us on a tight schedule. I snapped this picture as quick as I could (people were looking at me strangely, too - the one side effect of food blogging!) and I gobbled it up.


It was nice to spend time with big daughter. She isn't completely embarassed of me yet, and did acknowledge my presence most of the time we were at the museum. We had a good time!


Then, there was more rushing to get home and also, rushing to make some cookies for a Christmas party I am attending tonight. I tried a lowfat cookie recipe from Aimee's Adventures called Caramel Kiss Cookies and regular Gingersnaps recipe that I make often at holiday time. I tried the Caramel Kiss Cookies and they were good! They are cute little guys and only 1 Point per cookie...


Betcha can't eat just one...... :)

Lunch Break

I stopped home for lunch today even though I really didn't want to. The husband had invited me to join him out for lunch, but it was going to set me back in what I needed to accomplish today, so I declined(but I asked him for a raincheck!!) For lunch I decided to have what I would have chosen if I had gone with hubby - soup and a sandwich. I went with Tabatchnick vegetable soup. I know I have mentioned these frozen soups before but, in case you missed it, here's what they look like - in the box and out...




I heard some center cut bacon calling my name, so I answered and made a BLT on an Arnold Sandwich Thin. If you are a bacon fan, center cut is the way to go - 2 slices are 50 cal. and 4 gr. fat. You get all the flavor for only 1 Point. I also had a serving of Kettle Baked Potato Chips. All this goodness for 5 Points...


That power lunch really held me over. I didn't want much of a snack so I went with a Fiber One Strawberry Yogurt with 1 tbsp. of granola. It was just enough to take me to dinner...



The family was having ravioli for dinner tonight, but I didn't want to spend the Points especially since I will be weighing in tomorrow. I decided to have one of these Cha Siu Bao that I bought at the grocery store yesterday...


These guys are steamed buns with a hoisin barbeque pork filling which is a sweet type of filling. These were so amazingly good; soft and doughy. I made these from scratch a while back with a recipe I got from Cooking Light. These tasted exactly the same (ok, better) and sure as heck didn't take any effort to make! Each steamed bun has 210 cal., 4.5 gr. fat, 1 gr. fiber, 8 gr. protein and 320 mg. sodium. One bun = 4 Points. Great for a quick lunch or a party appetizer. I had a huge side salad with some light balsalmic. A delish 5 Point dinner...

I ended the night with a "healthy" chocolate cake that I made. I still need to refine this recipe, so I won't share it yet - it seemed a little too "grainy " for me. It was pretty good, but not fabulous which chocolate cake should always be! I iced it with some Cool Whip Free which helped it taste better...


But, chocolate ganache icing would have made it taste MUCH better ;)
