Get Me Off This Ride

Sorry for being MIA yesterday.  I had a horrible dizzy spell in the morning that left me in bed for most of the morning and early afternoon.  It’s been going on for a while, but yesterday was the worst ever.  I’m not one for spinning amusement park rides, yet I felt like I was on one the whole morning.  It made me pretty sick and I felt washed out from the whole experience.  I did get to a specialist later in the day who diagnosed it as benign positional vertigo.  I have a few more tests to undergo, but in the meantime, have some medicine to take in case it gets the degree it did yesterday.  Today, I’m feeling better and not as ‘tilt a whirl’, so I should be back in action! 

Needless to say, when you’re feeling dizzy, food is not the first priority.  My eats were pretty random yesterday and I just picked here and there when my stomach could handle it, so I didn’t take any pics.  But, I’ll catch you up with the day before and a nice surprise from yesterday…

Tuesday

I was looking forward to getting back to the gym since it had been a few days and I was actually excited to run!  I hit the treadmill for 20 minutes at a decent pace (trying to work on that!), then continued for another 15 minutes walking at a 10% incline.  I moved on to weights – chest, shoulders and abs for another 15 minutes.  It felt like a decent workout, but in record time :)

Once in the car, I was ready for breakfast- a Cherry Pie Larabar and 2 clementines…

Then, it was errand time;  it never ends :)

Lunch was pushed back to later than I liked.  When I come in starved, I want to just grab the easiest thing.  Today it was an Applegate Farms Organic Uncured Beef Hot Dog on a whole wheat bun, Tabatchnick Vegetable Soup and carrots.  All ready, thanks to the microwave, in under 5 minutes!

The daughters had a doctor’s visit in the afternoon, then we did some shoe shopping.  So sad to be leaving the flip flops behind and get into some real shoes :(  While we were out, I did cave into some more coffee (I’m glad my doctor doesn’t read this blog), a tall decaf nonfat latte from Starbucks which held me over nicely until dinner.

I was lacking a dinner plan tonight, but thankfully pasta always goes over well!  My brand of choice is Barilla Plus.  It’s a multigrain blend of oats, spelt, barley along with the addition of  lentil and chickpea flour.  Be not afraid!  It tastes terrific and the husband and daughters are none the wiser.  It really does resemble regular white pasta in both taste and texture.  Now, I do have to make it plain for them with either sauce or butter and cheese, but I decided to jazz mine up with some pesto!  I know I’ve been kinda hooked on that lately:)  Since pesto is pretty caloric, I only used 1 heaping tsp. to dress the pasta, along with some of the pasta water and added it 1/2 cup chickpeas and shredded baby spinach.  I topped it with some grated parmesan and couldn’t wait to dig in…

I puffy heart pasta!  And it was surprisingly filling due to the extra protein punch of the chickpeas.  Yum!

Then, it was off to bed only to be awakened by the dizziness in the early morning.  I felt badly because it was our 14th wedding anniversary and I wanted to make a nice dinner for the husband.  But, that didn’t work out.  We did get a special treat from my parents, though…

A gift basket filled with wonderful Italian-inspired treats.  Even though my stomach wasn’t quite up to it, I couldn’t help trying out one of the treats…

Just Beachy

Hey Everyone!  I’m posting early since we are leaving from the shore later tonight and will be getting home late…

Now THAT’S what I’m talking about!

I wasted no time hopping on my bike and went for an awesome hour long ride with my Dad!  The weather was just perfect for riding :)

When I got back, I was huuungry.  I whipped up the same breakfast as yesterday:  bagel sammie with egg white and reduced fat cheese…

Then, it was off to the beach…

We brought lunch to the beach and dug in not long after getting there.  Something about that sea air makes ya hungry!  I packed up a crabby salad for myself…

I could eat those giant crabcakes everyday!  I also munched on some of these Kettle Brand Baked Buffalo Bleu chips (spicy!)…

Lunch For Breakfast

After my sugar rush yesterday, I am totally craving salty. Nothing sweet appealed to me at all this morning. I was making little daughter a turkey sandwich to bring for lunch today and it just looked sooo good to me. So, I made one for myself - for breakfast! I used 2 oz. of turkey, some lettuce and a squirt of dijonnaise on an Arnold Sandwich Thin. I did have one "sweet"- a clementine- on the side...



That was just right and really hit the spot! I think it should hold me through my running around this morning, but if not, there's always the "coffee plan" :)

Inspiration

I loved The Biggest Loser Finale last night!! All the contestants looked AMAZING; even Vicki who I could not stand! I am thrilled that Michelle won; she seems like a genuinely good person. She didn't play the game in a nasty way; she just worked hard and did it!! Awesome. They are all so inspiring. It makes me a little veklempt (sniff, sniff).



On to the food. This morning I did not feel like eating the same old stuff, so even though I need to get my rear in gear and out the door, I decided to make some egg muffins. These are inspired by Kath's Smoked Salmon and Parmesan Omelette Muffins which I have made before and are really good. I made a variation of these and came up with Egg, Cheese and Bacon Muffins .
Easy to make; freezer friendly and a great "grab and go" breakfast for 2 Points! I am going to try not to neglect my food groups today, so I had a clementine to go with it...




Hope you feel inspired to eat healthy today! That goes for me, too :)

Lunch With The Ladies

I spent the day Christmas shopping with Mom and Gram, trying to help Gram finish up her list of people to buy for. We took a break for lunch and decided Subway was the lesser of all the evils in the mall (the pizza place was crankin out the enticing smell of freshly made pizza -ugh!). So, I opted for the 6 inch turkey and ham sub. They put whatever fixings you want on it and I went with the basics: lettuce, tomato, red onion, a couple pickles and a squirt of lite mayo. I did have some bad for your intestines Light Lays Chips. I have detoxed myself from these and I have to say that after eating my new favorite Kettle Baked Potato Chips, I was not so into these Light Lays. Score one for me! I also had a Diet Coke (baby steps, here)...


A bit of a Pointy lunch - 8 total Points, especially for not getting all my food groups in. However, today was a day of feeding the cravings, so the nutrition will come another day.

I was still in the bready mood for snack. I cut up an Arnold Sandwich Thin into triangles which I used to dip in 2 tbsp. of hummus. So good! I think I will do this for my next party/get together. I was feeling a bit guilty about my lack of veg/fruit, so I threw in a clementine!

A very filling snack for 3.5 Points! Just gotta get through dinner and dessert and I think I beat the munchie monster...
