Ride On

Finally!!!! Some sun! We woke up to a beautiful morning. The husband and I decided to ride bikes to go get some bagels for the morning's breakfast. It was a nice 2 mile ride in the sun! While everyone chowed down on giant bagels, I made my cereal bowl of 3/4 c. Puffins, 1/2 c. Almond Breeze and strawberries for 3 POINTS...



After breakfast, I took another 2 mile bike ride to return a movie. I am loving this bike riding! I was thinking during my ride how nice it would be to live in a little town where you could ride your bike everywhere. I would have one of those cruiser-type bikes with a cute wicker basket on the front. I might even wear a big hat with a giant flower on the front! LOL!


Before heading to the pool for the afternoon, I made an easy lunch of leftover roasted chicken breast with lettuce and a half slice of cheese on a small whole wheat roll. I had more carrots and pineapple to go with it. A quick 5 POINT lunch...

We spent the afternoon swimming in the toasty pool. I love heated pools! I took the opportunity to do more pool exercises (about 40 min.) and then goofed around with the husband and daughters in the pool. It was a great time!


We headed home late in the afternoon and I was starving! I dug into some pretzel sticks...


and some Annie's Cheddar Bunnies...

Mom and Gram made another wonderful dinner tonight. I was feeling hungry, but I mentally prepared myself before sitting down. I took a few minutes to "talk to myself" and figure out what my game plan was going to be. I thought about exactly how I wanted my plate to look with the prepared food and told myself to stick with my plan. My plate looked just like it did in my mind...


I enjoyed every bit, passed on the bread, and put my silverware on my dish and pushed myself back from the table when I was finished. I was still engaged in the table conversation, but wasn't tempted to add more food to my plate. I felt good about that =)
And after dinner, guess what I did?? Big daughter and I went for another 2.5 mile bike ride! I'm a ridin' fool today! When we got back, I dug into a bowl of Breyer's Fat Free Vanilla Ice Cream topped with about 1/4 c. freeze dried blueberries and a squirt of Hershey's Special Dark syrup for 3 POINTS...



Another day of sun is on tap for tomorrow, so I'm looking forward to some beach lounging! See you tomorrow; have a great night!!!

Sunday Around The House

I love lazy Sunday mornings. We had no where to be today, so I slept in until 7:30 but didn't get out of bed until 8:30! Love it! I worked on things around the house and helped the husband clean out the garage. I finally got around to eating breakfast around 11. I toasted up 2 slices of TJ's Sprouted Flourless Wheatberry Bread and topped it with a wedge of Laughing Cow Light for 3 POINTS...


A while after breakfast, I did The Shred for my workout. I haven't done it in quite a while, so I went with Level 1. Totally kicked my butt. I forgot how hard it was! I upped my weights and used 5 pounders and my arms were burning. I even had to stop a time or two! I have gotten all pansy-ish again! Jil would not be happy ;P

After that workout, I deserved a nice big lunch! I decided on a tofu scramble. Are you tired of hearing me rave about these??? I can't help it; they are so good! Really! Tofu can be yummy :) This scramble was made with 1/2 block of Nasoya Lite Firm Tofu, red onion, sliced button mushrooms, baby spinach, roasted peppers and a slice of 2 % cheese. I crumble and brown the tofu first, in nonstick cooking spray, then add the remaining ingredients and cook through. Couldn't be easier or more delicious. Using the lite tofu makes this really low POINTS. The entire block comes to 5 POINTS; I count half as 3 POINTS. The veggies are zero and the addition of the cheese is 1 POINT. So, this giant serving comes to 4 POINTS! So awesome! I had room to add a serving of Triscuits for 2 POINTS and some grapes for 1 POINT. This was one filling 7 POINT meal...

Later in the afternoon, I broke out the popcorn for everyone to snack on. I always forget about this. It is a great volume 1 POINT snack...

Dinner was a Salmon Roulette, Gram's green beans and 1/2 c. brown rice. A quick tip for brown rice- boil it like pasta! I know that sounds strange and not the traditional way to make rice, but if you just put your desired amount of brown rice in a pot of boiling water for about 30-40 minutes, then drain it; it comes out perfect, fluffy and with a great texture! It got 2 thumbs up from the family. A nice, healthy 8 POINT meal...


Okay, now for the dessert. I ditched the Vitahearts and tried out my Chocolate Espresso Glaze on a Deep Chocolate Vitatop...


SCORE!!!! This was so amazing! Rich, chocolatey and very decadent-tasting! And only 1 POINT! You'll be seeing this a lot :D
I'm clocking out early tonight. I have my friend's Dad's funeral in the morning and I know it's gonna be a tough day, so I'm going to get some extra rest. But, come back tomorrow night for a really FUN giveaway!!! Have a great night!

They're Baaaack!

I ended up skipping my snack this afternoon; glad I did because I ate quite a bit at my parents' house. There's something about being in the home I grew up in that makes me want to eat!! Probably because there is always something delicious to eat there! For dinner, I ate some chicken with 1tbsp. tzaziki dip(a cucumber garlic yogurt dip), a scoop of brown rice, some green beans and half of a small sweet potato with ICBINB...



And a little bit of salad and a piece of kalamata olive bread...

Then, I had seconds on the green beans and another bite of bread!! I don't know how I did Points-wise; I'll estimate it at about 10 Points.
Unfortunately, the parents still have many Christmas cookies/chocolates around. I dipped into about 3 of these small lemon coated shortbread thingies that were 30 cal. a piece and I had a bite or two of 2 other cookies. I didn't let it go any further, although I was this * close* to going off the deep end again. Instead, we got into a heated game of Wii Bowling (we got the Wii for my parents for Christmas) so it was a good distraction! I think I ended up with a 6 Point cookie dessert. I am over my Points by about 5 today. I don't think it's gonna make that much of a difference in tomorrow's weigh-in which will be a gain anyway, but I'm just glad that I am getting back on track and away from the constant Holiday Eating Buffet!!
The daughters are back and now we are back to reality!! No more "quiet nest". It's o.k. though, we like it that way. At least for tonight ;)
