This Is My Last Night Blogging

But, only until next Thurs.!!! Sorry, you can't get rid of me that easily! I've become addicted to boring the pants off of you all with the food diary of my life! However, we are going to Florida (Disney) on a family vacation and I don't think I will be able to fit in blogging amongst all the craziness. So, I will look forward to catching up with all of your blogs when I get back !

I have a million more things to do to get ready, so I'll make this quick. Breakfast was an open faced omelette using 3 egg whites, 2 slices of canadian bacon, handful of baby spinach and a slice of 2 % cheese for a delicious 3 POINTS...


Even though I had a ton to do, I wanted to make sure I fit in my exercise. I did a 40 weighted (18 lbs.) minutes on the elliptical and 20 tricep dips.

When lunch rolled around, I wanted to make sure to use up some of the leftover chicken. My first thought was Heather's BBQ Chicken Salad. It was so good! I used a little less chicken so, mine came to 6 POINTS...


I also had some Kashi TLC 7 grain crackers for 2 POINTS...
For an afternoon snack, I had a bowl of yummy strawberries (1 POINT)...



While I was sprucing up the house, I did grab a handful of Peanut Butter Puffins, too!
Dinner was easy tonight: hot dogs and whatever veggies left in the fridge! I decided to have a lonely Spinach, Fontina and Roasted Garlic Chicken Sausage from the freezer instead of a dog. I sauteed a side of baby spinach and topped with some pine nuts and made a side of "baked tofu fries", too. A tasty 8 POINT dinner...

I felt pretty full, so no big dessert tonight. I actually took out a Vitatop and was ready to defrost it, but then realized it wasn't necessary. I decided to just go with a "taste" of something sweet...

It was perfect! Well, I'm off to finish packing. I have to say that I will really miss blogging and reading all of your wonderful blogs this week! If I have some time, I'll try to check in mid-week, but if not, I look forward to seeing you all on the 9th for a recap of my trip. I'm going to try my very best to make healthy choices while I'm there. Hopefully, there will BE healthy choices! I'm counting on all the walking to be my saving grace!

Another 5K Day!

I woke up this morning with all good intentions of trying out my treadmill 5K for the second day. I headed to the treadmill and about 14 min. into the run, I began having second thoughts! It's funny how your mind can really mess with you. I was coming up with all kinds of excuses as to why I didn't need to do a 5K run for another day in a row! Finally, I got in a groove (and something interesting came on the TV), so I pushed myself to finish it! I even beat my time from yesterday by 40 seconds! Just goes to show the power of the mind and unfortunately, mine likes to talk me into things(like wolfing down tons of snacks -more on that later) or shall I say out of things(like staying on program- again, more on that later).



So after this wonderful run in the scenic basement of my home, I decided to have cereal for breakfast. I love these Barbara's Bakery Puffins. A 3/4 c. serving is 90 cal., 1 gr. fat and 5 gr. fiber which comes to 1 POINT....







Instead of going with milk, I used them to top 1/2c. plain yogurt with 4 sliced strawberries...



For lunch, I decided to have a "redo" of my meal the other day. I browned a Spinach, Fontina and Roasted Garlic Chicken Sausage, served it on a light hot dog bun. This time, I filled my plate with apple slices and a serving of Sea Salt and Pepper Rice Chips for a filling 7 POINT lunch...




This afternoon was spent hanging out with little daughter (big daughter was at a friend's house). We played games, Wii Fit and read. Then I made a snack that I haven't had in a long time - cheesecake pudding!




I love instant pudding; it really is ready in an instant! Which is essential for someone like me who lacks the virtue of patience. I topped my cheesecake pudding with a few slices of banana and 1/4 graham cracker crumbled. I know you're probably thinking, can't this girl eat ANYTHING plain???



That was really good, by the way. Kinda like a banana cream pie. It was filling for only 2.5 POINTS. I've said it before and I'll say it again, "it should've been enough, but it wasn't". Much of the remainder of the afternoon was spent snacking. Heavily. Which is probably how I will feel tomorrow. I don't know why I kept snacking. I actually was having conversations with myself that could be likened to a tennis match: back and forth, back and forth. I talked myself into eating stuff, then talked myself out, closing packages and pantry doors. Then in again, then out. WTF???? Pardon my potty mouth. But, as I always conclude...move on...NEXT!




Hi, I'm back! Yes, feeling better - back on track. Don't worry I'm not Sybil. Just feeling veklempt and had to regroup. Soooooo, on to dinner. We had some leftover roast beef from the freezer and along with that, I made a butternut squash puree and some crinkle potatoes...




I topped off the night with dessert. I know, I can hear the tsk, tsk from here, but I was still in the mood for the sweets. I had a serving of Breyers Fat Free Double Churned Caramel Swirl Ice Cream and a WW peanut butter cookie...




I feel full. Kinda sickish. As I sit here writing this post, my muffin top that's coming out of my jeans now feels more like a donut. Eeewww. What's a girl to do? Another 5K day tomorrow, you say??? Well, okay =(

My Apologies

My apologies for this lackluster post. I am feeling a bit under the weather; I think I'm coming down with a cold, but I'm fighting it's onset hard with mega Vitamin C, B-12, neti pot and basically lying around doing nothing. Dust and dishes are piling up, but I'm just not in the mood to do anything about it! Hopefully, tomorrow I'll be A-O.k. So, here's a quick synopsis of what I ate today...



Breakfast was a little something different: 1/2 c. fat free ricotta cheese with a bit of Splenda mixed in and topped with 3 oz. sliced strawberries and a tbsp. homemade cinnamon granola...







For the record, this kind of breakfast, although packed with 12 g. protein, does not hold me over very long. I was pacing around "waiting" for lunchtime to roll around. Isn't that ridiculous? It's like, if you're hungry just eat already! But, nooooooo. I didn't want to spend any extra POINTS before their time! Note to self : get a new strategy - this does not work! (read on - you will see why). So, finally I decided it was time to eat lunch and I wanted to try these Spinach, Fontina and Roasted Garlic Chicken Sausages...



Yes, I said FONTINA !!!! I never met a cheese I didn't like, but Fontina is my number one favorite! One of these sausages is 140 cal. and 8 gr. fat which comes to 3 POINTS. They are fully cooked and just need a little pan fry for about 12 min. I did this in a dry nonstick skillet which worked great. But, 12 minutes seemed like an eternity, so I began to snack on the last bit of homemade hummus and a few carrots...


I couldn't really come up with a creative condiment for the sausage, so I decided to let it stand alone on a light hot dog bun. Heck, it's got Fontina; what else could it possibly need??!! To go alongside, I had 1 c. Trader Joe's Creamy Tomato Soup with a few New York Style 96% fat free mini bagel chips...



So, here's where my "note to self" comes in. This lunch, although filling, came and went too fast. I powered it all down without really "tasting" everything. Therefore, I was not full "mentally". I started digging into all kinds of snacks such as, baked potato chips, cheese, some pieces of chocolate, crackers, etc. I kept switching from salty to sweet, sweet to salty. Ugh! Here's where the lesson learned comes in: if I had just eaten earlier, when I was hungry, regardless of the "time", I might have headed this all off. I may not have been in that mode of "urgency to eat" and could have been able to eat more mindfully. Lessons, lessons, lessons. Everyday is an opportunity to know myself better and help manage these bad eating habits. I'm not thrilled about wasting all those POINTS on mindless eating, but I'm not gonna beat myself up as I usually do. Time to move on...

NEXT!


Yes, my next meal was back on track. Dinner was Turkey Meatloaf and roasted sweet potatoes. You may be thinking what happened to pizza night - it IS Friday night, right???? Yeah, the husband and daughters were thinking that, too. But hey, sometimes you just gotta mess with them, you know???!!!! Along with the meatloaf and sweet potatoes, I had a Sundried Tomato and Garlic Roll. A healthy 7 POINT dinner...



No dessert tonight. You KNOW I must be sick. Gonna cozy up in bed and dream of wellness. Happy Friday =0)
