Yacking And Snacking

Hey, everyone! I'm back from the shore. Internet access was dicey and although, I did try to post a few times, it never made it to publish because I would lose the connection :( Anyway, it was a great time with my friend, Coleen and her daughters. She invites us every year and we really enjoy spending time with them; our daughters love hanging out together and we yack the days and nights away! She is also a trooper about following my "healthy lifestyle" as she affectionately calls our stay with them, Fat Camp;P She allows me to play chef, plan our meals and get in my exercise. It's so nice having that support and helped me stay as focused as I could. I did do quite a bit more snacking than I wanted to, but overall, I stuck with healthy choices.



I'm looking forward to spending some QT with the husband, so here's a quick photo recap of our eats. Enjoy and I'll be back tomorrow night for my regularly scheduled programming!

Glad to hear you had a wonderful time. The last picture is beautiful. That cookie sounds yummy. The strawberries in the first picture are incredibly red. And I laughed reading the red red wiiiine. lol.

ahhh this post is so carefree and happy!! it makes me smile!! Especially that bit on the fat camp! hahah anytime i spent time with my family is pretty much fat camp for me. :P WOW that cookie looks yummy!! Is that home made or store bought?!?!

Mocha Trina - I adapted the recipe from Real Simple Magazine. It called for just using 1/2 c. pasta water and 1/4 c. of parm cheese to sauce the pasta, along with 2 tbsp. olive oil used to sautee the zucchini. It was good!!

Hey, Marisa! Missed you. Sounds like you had a great time at the beach.

The spagetti with zucchini and chickpeas DOES look great. Must give that a try.

By the way, finally got the Almost Breeze today. So now what to do with it? I KNOW YOU CAN GIVE ME SOME GOOD IDEAS. Something about a crack shake? :)

Hey Reen!!!! I love Almond Breeze for my cereal; I only use 1/2 c. and it's plenty and only 20 cals.! For the crack shake, I use Almond Breeze, ice, 1 tbsp. sugar free fat free pudding dry mix (whatever flavor you like - I like vanilla or white chocolate) and 1/2 c. berries of your choice ( I like strawberries best). You'll love it!
