Sayonara Shred!!!

Whew, the February Shred Challenge is over!!!!!! Holy Moly, that was the longest 28 days of my life! LOL!!! Seriously though, what an awesome workout. I do really like this DVD; it was tough but I loved that it was only 20 min. I think it will definitely remain in my workout rotation, just not everyday like I did for the challenge! Even the husband is hooked and will keep doing it 2x a week. So now for the RESULTS! Was all this Shredding worth it??? Well, I jumped out of bed this morning, popped in the Shred and huffed that baby out for the last time this month, then grabbed my measuring tape for the big reveal. Here's the inches lost list...
  • arms - 1/2 " each
  • chest - 1/2 "
  • waist - 1 "
  • hips - 3/4"
  • legs - 3/4" each

That's a total of 4 1/4" lost! Hey, not too bad for 28 days! Actually, I can't claim all 28 days; I did miss 2 days and probably had a couple "half-assed" Shreds when I just kinda went through the motions but didn't give it my all. This wasn't my only form of exercise; I still got in the elliptical and runs, but I definitely see the difference in my arms the most. I have developed a nice muscle on the sides of my arms, I'm thinking from all those stinkin push-ups! And my abs definitely feel "six pack-ish" under the 3" layer of fat that is currently covering it. So, even though I am not fully "shredded", I am happy with my results and proud of myself for sticking with the Challenge. To all the Shredders who hung in there with me during this Challenge, please feel free to post your experience or measurement results in my comments or link to your blog if you are posting them there. I'd love to see how everyone made out! Okay, let's get to the food...

After the Shred and measuring, I made a quick breakfast of 2/3 c. TJ's High Fiber Fruit and Nut Multigrain Medley with 1/2 banana and 1/2 c. unsweetened Vanilla Almond Breeze for 3 POINTS...


Then, I headed to my friend, Rosemary's baby shower. It was a lovely shower; she got lots of cute stuff for her little guy. A nice buffet lunch was served and I was happy to see some healthy choices. I chose a mixed greens salad, sauteed veggies and about 2 oz. of sliced steak. I had my own dressing packet that I keep in my purse and used that for the salad which made it a friendly 5 POINT lunch...


I have to admit, I was a little apprehensive about whipping out my camera at this shower filled with people that I didn't know, but I sat next to the guest of honor and she knows about(and has appeared) on my blog, so I didn't feel as odd to take a quick pic! Ugh, the woes of the food blogger!!!

A little after I arrived home from the shower, I was feeling hungry. Big daughter had a late basketball game scheduled and I knew we would be eating a really late dinner, so I made a filling snack of a Weight Watchers Vanilla Yogurt topped with a crumbled Chocolate Brownie Clif Z Bar for 3 POINTS...


Dinner was very late, so I had planned a soup and "make your own panini" night. I went with 1 c. Trader Joe's Creamy Tomato Soup and a panini made with rustic whole wheat bread, 2 tbsp white bean hummus, 1 Laughing Cow Light Cheese Wedge, baby spinach and sliced tomato. A comforting and quick 6 POINT dinner...



Since, I showed great restraint today at the shower by not eating the amazing looking cake or THE BROWNIES that were displayed so seductively on a tray, I decided to treat myself to a wonderful dessert. Okay, who am I kidding - you all know I "treat" myself to dessert EVERY NIGHT!!!!! But, anyway, I tried to make this one special; a " bananas foster - inspired "sundae. I sauteed a medium sliced banana in a nonstick pan coated with a bit of cooking spray then, stirred in Lighthouse Reduced Sugar Caramel Dip to coat bananas and poured this over 1/2 c. Breyers Fat Free Double Churn Caramel Swirl Ice Cream. Mmmm...warm bananas and caramel ROCK! A "better than those brownies" dessert for 4 POINTS...

It's A Great Day For My First Giveaway!

Now, let's get to the food! I ate an early breakfast this morning; the husband and I had a "workout date" planned, so I ate before heading out. I went with a "mock egg McMuffin" using a Thomas' Light English Muffin topped with egg white, a slice of 2% cheese and a slice of center cut bacon. Better for you than Mickey D's and only 3 POINTS...



The husband and I dropped the daughters off at school and headed out for our "workout date" (with the dog!). We went on a 40 min. hike through the steep and hilly woods. This always makes me feel so out of shape! I am huffing and puffing up the hills like nobody's business! The husband walks so fast, too , so it's hard to keep up! It was nice though and the dog had a blast crashing through the woods! He got an awesome workout. Then, we came home and the husband suggested we do the Level 3 Shred together! He does the advanced moves and I do the scaled down version, but it is still darn hard and I am SO changing my name to "Anita" when I am done with this Challenge tomorrow! LOL!!


After Shred and shower, I went to meet my friend, Jenn ( HI Jenn!!!) for lunch at Cosi. This was my first time at Cosi; it's a neat place. My eyes immediately went to the desserts, but I shielded them like a horse with blinders and settled on a Bombay Light Chicken Salad with fat-free balsamic dressing and 1/2 of their delicious flatbread. A nice lunch for 6 POINTS...


After a nice chatty lunch, I ran some errands. One of my stops was Trader Joe's where I found this yummy High Fiber Fruit and Nut Multigrain Medley cereal...



Seriously, could that name be any longer?????? Anyway, it is a delicious mix of high fiber clusters, raisins, cranberries, almonds and pecans (although, not much in the nut dept.). A 2/3 c. serving is 90 cal., 1.5 gr. fat and 7 gr. fiber for 1 POINT. It was a great snack mixed with a Weight Watchers Berries and Cream Yogurt for 2 POINTS...



That held me over nicely until dinner. The husband and daughters had pizza but, I had a craving for burgers so I made a Buffalo Turkey Burger! I took 4 oz. of ground turkey breast and added to it some finely minced onion and celery, a dash of salt, pepper, paprika, garlic powder and 1 tbsp. Frank's Hot Sauce. I mixed it all together, formed it into a patty and pan fried it in a nonstick skillet. Then, I put it on an Arnold Sandwich Thin, topped with lettuce and 1 tbsp. Marie's Lite Chunky Blue Cheese Dressing. So delicious, lots of flavor and a hearty serving! I had a side salad with some additional blue cheese dressing to go with this awesome burger, all for 5 POINTS...



I did have a few nibbles of pizza, but only about 2 POINTS worth. Thankfully, I wasn't that into it tonight. The burger really was satisfying, in flavor and volume. But, I always have room for dessert! My combo tonight was a Banana Fudge Vitatop with 1/2 c. Breyer's Fat Free Double Churn Caramel Swirl Ice Cream and a squirt of fat-free whipped cream for 2 POINTS...



Banana, fudge AND CARAMEL!!! Yes, it's a beauuuuuutiful thing =)

Back In Action

I was so glad to be outside today!! I was a little disappointed in the weather; I thought is was going to be sunny and warmer for my morning run, but that wasn't the case. In any event, I got the daughters off to school and headed out for my run. I was a bit weak this run, but after I got going, I felt better. As I was walking my cul-de-sac to cool down, my neighbor asked me if I wanted to walk, so I walked a little with her, too! Hi, Dana!!! Then, I came in to Shred! I realized after posting last night, that I forgot to list my Shred for yesterday afternoon. I got it in, even though little daughter was bugging the bejesus out of me during it!! Anyway, there are only 2 DAYS LEFT to the Shred Challenge! Hallelujah!

After my morning exercise extravaganza, I made a breakfast of Thomas' Light English Muffin with a wedge of Laughing Cow Light and a Weight Watchers Strawberry Yogurt for 3 POINTS...


I had some shopping to do after, then stopped home to eat a quick lunch. I went with an Arnold Sandwich Thin with 2 oz. turkey, 1 tbsp. white bean hummus, lettuce and tomato, a serving of Soy Crisps and a side of carrots. A speedy 5 POINT lunch...


For a lunchtime goodie, I had one of these Luna Cookies. I have to say they taste more like a "bar" than a cookie. In fact, they have the same texture and chewiness of the Clif Z Bars that I like (hmmm.... they ARE the same company). This Chocolate Mint flavor was 130 cal., 3 gr. fat and 3 gr. fiber which comes to 2 POINTS. It was tasty, but I think the Clif Z Chocolate Brownie Bar is better and much less expensive! I paid 1.69 for the Luna Cookie, but I get the Clif Z Bars at Trader Joe's for 69 cents! Huge difference, but I am a sucker for packaging and these "looked cute" ...



Well, this lunchtime dessert led to another in the form of the last No Pudge Brownie! I counted this 2 POINT treat in my tracker right away and then got the heck out of the house before I started digging for something else! It worked and I felt my munching feeling go away. I was glad about that; I really wanted to stay on track today.

The afternoon flew by with the usual grind of homework and projects. I decided to forego afterschool activities since this was little daughter's first day back to school this week. The husband was working late, so the daughter's got to have their choice for dinner. I bought lots of baby eggplant at the produce store today, so I decided to work my dinner around those cuties. I ended up with Eggplant, Tomato and Chick Pea Rigatoni! I sauteed 3 baby eggplant in 1 tsp. olive oil, garlic and a bit of sliced onion. I added 3/4 c. canned petite diced tomatoes ,1/2 c. drained chick peas, some basil, salt and pepper. I let this simmer while I cooked 1 c. rigatoni pasta. I topped the pasta with the eggplant mixture and 2 tbsp. parmesan cheese. Oh my greatness! I think I could eat this delicious 7 POINT dinner every night...


Then, it was dessert - AGAIN! I went back to my good old fave - Triple Chocolate Vitatop with PB2/fluff icing for 2 POINTS...

And that was my back in action/on track day! So, a couple things before I go: a) my BLBE WI sucked royally this morning - +2.8 lbs. But, that was no big surprise since the wagon that I fell off "crashed and burned" this week! b) I feel very relaxed. What I mean is, I am not having a fit or flipping out about this gain. I know why it happened and I know it's gonna happen sometimes. And I'm o.k. about it. It's not forever. I am not going backward . I'm not going to gain back 70 lbs. I'm going to keep on trying til I get to goal; then I'm going to keep on trying to lead the healthy lifestyle that I need to so that I can keep the weight off for my lifetime. Yesiree!

Here's Johnny

I'm starting to feel a little like Jack Nicholson in The Shining; cooped up and going stir crazy! I have not crashed through any doors, saying, "here's Johnny", but it was getting close! A little too much togetherness with little daughter, plus she's feeling better, so she was extra nudgy :) In honor of her "last day" home, I made her breakfast in (my) bed. I sat next to her with my breakfast of 3 scrambled egg whites topped with fresh salsa and 1 oz. lite mozzarella and a toasted Thomas' Light English Muffin; all for 3 POINTS...







We did some schoolwork after eating and I got in some laundry. Before I knew it, it was time for lunch. I found something new for me at the grocery store that I have been wanting to try...



I found these store brand Soy Crisps on the shelf with the rice cake-type items which was probably the right place as that would be exactly how I would describe them. I chose the cheddar flavor which I liked; it was a mild cheddar, not too overpowering. They also came in a ranch and barbeque flavor which sound good, too! A serving of Soy Crisps is about 19 chips and come in at 120 cal., 3 gr. fat, 2 gr. fiber and 7 gr. protein! They are transfat free and cholesterol free, too! A great "chip alternative" for only 2 POINTS!


Along with the Soy Crisps, I made a white bean hummus melt which was inspired by Cooking With Anne , a wonderful blogger who amazed me with her "from scratch" cooking and food budgeting skills for a family of 9! My version of this open faced sammie was made with 2 tbsp. of my homemade white bean hummus spread on a Weight Watchers Pita and topped with sliced tomato and 1 oz. Cabot's 75% Reduced Fat Cheddar and run under the broiler to melt the cheese. I had a sliced apple to round out this yummy 7 POINT lunch...



This was a nice filling lunch and really didn't leave me wanting much in the way of a snack this afternoon. I did have a cup of coffee with fat free half and half for 1 POINT as a warm treat, but no munching. I feel the munchiness from the past few days beginning to subside (thankfully), so I should be completely back on track this coming week!


For dinner, I decided to make myself something special that I KNOW the rest of the family would NEVER eat!! SHRIMP! Eeewwww, they say. I told them that something is wrong with their mouths ;) So, my faaaaabulous dinner was Salsa Shrimp with Feta over Whole Wheat Couscous! I sauteed 8 oz. large shrimp in a nonstick pan with cooking spray, added about 1/2 c. fresh salsa until heated through. I poured this over 1 c. whole wheat couscous and topped it with 1 oz. lite feta cheese. An amazing 8 POINT dinner...




I ended the night with another No Pudge Brownie iced with PB2. So rich and decadent tasting for 3 POINTS...



So, tomorrow little daughter is back in action and so am I! I am really looking forward to a nice outdoor run in the morning! Gee, never thought I would hear myself say THAT! Strange, but true =)

Homebound- Day 2

Little daughter is still sick, so another day in the house. One would think I would get a myriad of things done around here, but on these sick days, I tend to sit with the sickie all day and not do much of anything! House is still a mess, clothes unlaundered, food barely made. I have had zip in the creativity dept. lately with my food. I really need to get some planning done with some new recipes on the menu to spice things up around here! I gotta get a fire goin under this butt! So, onto my boring food today...



Breakfast was whole wheat pumpkin blueberry pancakes that I had in the freezer with a side of 1/2 Weight Watchers Strawberry Yogurt (split with little d -why do they have to eat MY stuff!!) topped with a few slices of banana for 3 POINTS...





After breakfast, I forced myself to do Level 3 Shred. Hanging around the house has made me very lazy, but I knew this was the only exercise I was going to do today, so I did my best "bad-ass" workout. Jillian was happy; she told me so. She says that at the end; it's way after the part when she tells you she wants you to feel like you're gonna die ;) Only 4 days left, Shredders!!!



For lunch, I wanted a giant shaker of salt with shavings of chocolate on the side. I didn't think that would look very nice on the plate, so I opted for a Chicken BLT using a leftover thin sliced chicken breast (1 1/2 oz.) on an Arnold Sandwich Thin, topped with 2 slices of center cut bacon, lettuce, tomato and a tiny squirt of Kraft Light Three Cheese Ranch. On the side, I had a serving of Baked Cheddar and Sour Cream Lays Chips and a sliced apple for health's sake. A salty-licious 7 POINT lunch...



Just like yesterday, more chips followed along with some chocolates all while reading my new book that I got at the library, Intuitive Eating ! Seems I need more work in this area ;) So, here's a positive- during this eatfest of salt and sweet, I downed a TON of water! That's good, right?? Definitely got in all my WATER today! The bloat has set in and I am fairly certain that I have gained 40 lbs. today :0



Dinner was quick and easy. The daughters wanted breakfast for dinner - cool! I went with the same for myself. I made an egg sammie made with egg whites, baby spinach and a slice of 2 % cheese on a Weight Watchers Petite Bagel along with a side of carrots and grapes. An easy, healthy, back on track 4 POINT dinner...



I'm just gonna keep trying. Keep reeling it in everytime I go off the wagon. There is no other choice; just keep on keepin on. Eventually, it will click and I'll be on a roll again. Right???? Right!!!


And brownies are on the wagon!! At least these guys are. They do not cause "pudge" - the box says so! Best of all, they are only 2 POINTS. I went with a naked one tonight...



Okay, tomorrow is a new day and it will be another homebound day with little daughter. I have pretty much eaten every salty and sweet snack in the house, so I think I should be pretty good tomorrow!!LOL! I plan on making a new and exciting dinner that no one will eat except me because it will be healthy and POINT friendly and I will spend the day dancing around the house singing, "what have you done today, to make you feeeeeel proud". It's gonna be a great day =0)

Homebound

I was homebound today with little daughter; she is sick and I'm not feeling so peachy myself. I'm kinda achy and tired. Not sure if I'm fighting something off or what. Plus, TOM showed up today, too. Hate that guy! But, I guess that explains my need for the intervenous chocolate hook-up this past weekend ;)



Little daughter and I lounged around all morning. We finally got around to eating breakfast around 10:30. I went with a Weight Watchers Pita stuffed with 3 scrambled egg whites, a slice of 2 % cheese and a slice of center cut bacon. Yummy 3 POINTS....







After breakfast, I made sure to get in 30 minutes on the elliptical and a Level 3 Shred. Brutal, but necessary! Only 5 days left, Shredders!!!!


For lunch, I decided to try these chicken breast nuggets that I picked up at Target the other day...



These nuggets were okay. The nutritionals were impressive; a 4 piece serving is 120 cal., 2 gr. fat (0 g.sat/trans fat). What I liked about them were that they were actual pieces of chicken breast instead of the "chopped and formed" variety. The breading was crisp, however, I thought the flavor was a bit on the bland side. I also wondered if the nutritionals were accurate since the chicken pieces were different sizes. So, to be "exact", I weighed them and they came to more cals. in doing that. A serving is 4 pieces (84 gr.), but my 4 pieces came to more than that. I know it's just playing with a few calories, so I upped my count another POINT. Still, 6 nuggets for 5 POINTS isn't too bad! I think these might be good tossed in some buffalo wing sauce, so I'll try that next time. Today, I just ate them with a tbsp. Kraft Light Three Cheese Ranch, some carrots and a serving of Baked Cheddar and Sour Cream Lays. A fun 8 POINT lunch...



More lounging went on this afternoon, along with some munching. Alternating salty and sweet, sweet and salty. Ugh, TOM is a jerk!

I cut it off though because deep inside, I really don't want to be doing this munching. I want to be ON PROGRAM, on a roll, keeping it going, headin to the finish line and all that. So, dinner was nice and healthy: sauteed thin-sliced chicken breast(4 0z.) topped with fresh, homemade salsa and a side of leftover roasted sweet potatoes. A great, "who needs chocolate" dinner for 8 POINTS...



Then, I made brownies. I know, I can't help myself! Thankfully, I had the No Pudge Fat Free Brownie Mix. A box makes 12 servings at 120 cal., 0 gr. fat and 1 gr. fiber which comes to 2 POINTS per brownie. That is, if you can eat PER. I tried to help myself in this area by making the brownies in a 12 cup muffin tin instead of a regular 8x8 pan cuz you KNOW more goes in the mouth during the "cutting" process! This worked out great; instant portion control! These brownies are very good, thick and fudgy. I was craving reese's peanut butter cups so I decided to top the brownie with some PB2. A very rich, craving crusher for 3 POINTS...



Well, I'm a little bummed that I wasn't completely back on track today. Angie let me know that I made the biggest loser of the week for this past week and now I'm letting my team down this week with this craziness. I keep doing this volley thing where I follow through with my plan one week , then sabotage myself for the next week. Back and forth. I just want to get a few good weeks under my belt to drive me to my end goal! Frustrating, but I'm never giving up. I know I'll get there!!!!!


Don't think little daughter is ready to go back to school tomorrow, so I'll be homebound again. Where should I hide the brownies??????

I've Got Some 'Splainin To Do

Boy oh boy, what a whirlwind weekend! It was big daughter's birthday and we had lots going on. I did my best to try to keep up with my food pics, but some things got out of hand in the eating dept. and I did not take pics of those violations! Ugh, and I was so happy to hit my 70 lb. mark and there I went screwing that up! Phew, talk about falling off the wagon. I fell off and rolled down a big hill (covered in chocolate) while the wagon went speeding off in another direction ;) Time to restart today before things go too far. So, since I've been a bad blogger these past few days, I'll try to catch you up to date on my food stuff : the good, the bad and the ugly...

Friday

For breakfast, I had a Weight Watchers Petite Bagel with Laughing Cow Light and 1 0z. smoked salmon with a sliced pear on the side for 3 POINTS...



Lunch started off good with a serving of zucchini lasagna and a 2 oz. ciabatta roll. The lasagna was even better the second day; I would definitely make this again! A delicious 7 POINT meal...

I spent this whole day cleaning the house, running last minute errands and preparing for big daughter's celebrations. She had invited a couple of friends to hang out and stay overnight, so I was busy getting things in order for the girls' night. I knew we were going to be having our usual Friday night Pizza a bit late tonight, so I had an afternoon snack of some pretzels and a lite string cheese for 3 POINTS...


Again, I learned that this afternoon snack seems to be a trigger. I had a MILLION more handfuls of pretzels after that! I'm not sure why; I think I was experiencing some anxiety about getting things done or maybe I just had some nervous energy thing going on, but it pretty much went downhill from there. I kept picking on other snacks that I had out for the girls, like cheese curls and mozzarella sticks!


Then, it was time for pizza. I ended up having a slice, some carrots and 2 more mozzarella sticks (there was no more counting of POINTS at this time)...


After pizza, I hooked up the chocolate fountain that I ran all over the universe to find. The girls were really excited about this! I had a tray full of dippers that included marshmallows, strawberries, grapes, bananas, potato chips, mini oreos, cake squares and pretzels. They went to town! I joined in the fun; the strawberries and pretzels were my fave!


Finally, I cleaned up and sent the girls off to bed. It was way to late to do anything, but plop into bed! So no blogging and no SHRED! ugh!!!! There was even no shower - eewwww!



Saturday


Okay, new day - new start, right? Nooooooo. Here's the good: Weight Watchers Petite Bagel, egg white, 2% cheese and slice of center cut bacon with a side of grapes for 4 POINTS...



Still good: Arnold Sandwich Thin topped with PB2 and Smucker's Sugar Free Grape Jam with a side of sliced apple for 3 POINTS...



After lunch, I began making some appetizers for big daughter's birthday dinner that night. The grandparents were planning on coming to her basketball game and then back to our house for dinner, so I wanted to have things prepared. I made fresh salsa served with Tostitos Baked Scoops tortilla chips...




and a white bean dip served with cut-up Arnold Sandwich Thins and crackers...


Both were low POINT options, but it all adds up if you keep diggin in it! Which was what I did... a lot! That was "the bad".


For the first course of our dinner, I made Dreamfield's Penne Pasta with my marinara sauce. I only had a small serving...



I also made chicken cutlets...


roasted sweet potatoes with olive oil...


and Gram's broccoli with olive oil and garlic...


and we had an amazing rustic Italian bread...


Here was my plate of "a little of everything"...



Not too bad, right?? You see by my menu that I really was trying to make something that big daughter loved but, also something that was POINT-friendly. This menu had success written all over it!!! But, then came.......THE UGLY.....



So bad, but oh, so good! I broke out the chocolate fountain again for dessert with this tray of dippers...


I ate a ton of dipped pretzels and strawberries. I tried the grapes, mandarin oranges and marshmallows, too!


And we had to have birthday cake! My Mom made this adorable cake that just screams "eat me"...



And I DID...

After all this, I felt whale-ish for sure. Disgusting. To top it all off, there was also no 5k Saturday and NO SHREDDING this day either! Aaahhhh! That's 2 days of no exercise -yikes!


So, that brings me to today. It's Sunday and I knew that I HAD to get back to the program today; back to the routine. I felt so out of sync these past few days, but I guess life gets in the way sometimes. I headed to the basement for a 5K Sunday which was a bit weak, but I did it. Then, it was an "on program" breakfast of Puffins (only have cinnamon left and I don't love these, but the plain ones are great), 1 c. of blueberries and 1 c. unsweetened vanilla Almond Breeze for 3 POINTS...




A little while after that, I made sure to Shred. Can you believe I did Level 3 ????? Yes, that's right! I felt that I should torture myself!!! But, I ended up really liking it! It didn't feel it was as bad as Level 2 for some reason. It was a nice change from Level 1 and had a good amount of ab work and focused on "plyometric" exercises for the cardio. So, for our last week of Shred, don't be a chicken like I've been - give the Level 3 a try. Let's rock out these last 6 days of the challenge and "finish strong" like Jillian says!


For lunch, I went with a good old ham wrap, a serving of Baked Lays and a sliced apple for 5 POINTS...



I also had a Kashi TLC Fruit and Grain Bar in the raspberry chocolate flavor for 2 POINTS...



I spent the rest of the afternoon lounging around with the daughters and watching movies. It was a nice, lazy day!


When dinner time rolled around, I remade some leftover chicken cutlets into chicken parmesan by topping the cutlets with some sauce and an ounce of mozzarella. I also had a side of peas and a 2 oz. slice of the rustic bread for a tasty 10 POINT dinner...


No dessert tonight. I think I've had enough the past couple of days. There were probably more bites of chocolate and handfuls of M&M's that I may have "forgotten" about too in those days. So, that' s the scoop! Hope I didn't bore you with this super long history of my overindulgences these days! I'm definitely ready for the "detoxing" now. I feel like crap. Why does it taste so good at the time, but makes you feel so yucky after? Well, I guess it's all in the AMOUNT that you "taste", right??? I'm gonna try not to think of the scale this week and what number may await me. I'm just going to refocus and hope that the LARGE HUNK of leftover birthday cake that is eyeing up my hips looking for a new home, will "accidentally" fall into the trashcan by the morning :0)
