Practicing Vegan

I find myself getting obsessed with certain things.  Well, recipes in particular.  First, it was Danica’s Cheesy Bacon and Bean Stuffed Pepper recipe.  I couldn’t get it out of my mind once I saw it!  Now, it’s the Fat-free Pumpkin and Raisin Biscuits from Fat-Free Vegan Kitchen!  Why the vegan recipe?  Well, I’ve always been intrigued by vegetarianism and veganism.  I even tried on the vegetarian lifestyle for a while, but started getting lazy about cooking and ended up eating lots of junk instead of healthy foods.  Anyway, this past week Michelle from Eating Journey asked if I would like to join her and other bloggers in going Vegan for a Day on Thursday.  I thought it would be a fun challenge, so on Thursday, vegan I shall be!

To “practice”, I whipped up these biscuits for breakfast.  They were so easy;  no mixer required…

Then it was off to church to give thanks and praise :) 

Lunch had to be quick because I was starving and we wanted to head to the park  to enjoy the beautiful day!  I remembered there was some  White Pizza with Zucchini and Broccoli in the freezer, so I heated that up pronto…

Then, it was off to the park for a 2 mile walk and some B-ball …

I planned a lovely, healthy Sunday dinner of roasted chicken, roasted butternut squash and broccoli.  No one eats the squash except me, (sigh)but I keep trying…

I didn’t have any bread in the house, (why do I always feel like I have to serve bread at every meal?!) so I broke out these crackers from the Anniversary basket

Sad to see the day end.  Love these gorgeous days!  Hope you had one, too!

ONE GOOD THING:  Trying new recipes really satisfies my creative needs!

I'm doing the Vegan thing on Thursday, too! I can't wait to try out some new recipes from you and the other participants.

This will be a good exercise for me! I'm looking forward to the experience.

I am also of the mindset that a meal is just not complete without a piece of bread! ;)

You're totally right. It is easy to slip into eating a lot of junk food when you are a vegetarian. I still eat mostly meatless and I'm a bit of a carboholic. I'm trying to change that tho.

I have pumpkin in my freezer from when I made that fudge so I'll be trying those biscuits for sure.

Good luck with the vegan Thursday Challenge. I think these "one-day-a-week" challenges are really nice. It is like baby steps towards "something bigger." Small changes first, then it becomes a habit and then it become permanent.

So you know I am dying to know if you ever made the peppers now :) ?! they are so good - I need to make them again.

FYI - To feed your recipe addiciton, when I first started blogging, I went vegan/gluten free for a week, then, vegan for a week, then vegetarian. I have a VEGAN section on my blog with lotsa recipes if it makes you wanna try any (I made a rockin' pad thai! among other things).

I so want to join in but since we will be heading to the East Coast.....Hmmmm, maybe I can try....I LOVED her idea when I saw it.

Like you though, I have the same issue with being vegetarian, I find I turn into a carbetarian :)
