Meatout Day

As I was uploading my pictures for this post, I realized I ate an all vegetarian menu today! So, I am taking part in a belated Meatout Day . This was originally on March 20 and is a day that this group asks for us to "kick the meat habit" for at least a day and eat a diet of fruits, vegetables and whole grains. Done! I'm just a few (okay, five!) days late. Better late than never they say...



After a 30 min. run (all I had time for) this morning, I made a yummy breakfast of hummus-filled eggs. Remember the first time I made these? They really are terrific and packed with protein staying power. I had a fuji apple on the side for a 3 POINT breakfast...






I had to take Gram to a meeting at her new housing community and after that, we met up with my Mom for lunch at Ruby's Diner. I ordered the Vegwich which was avocado slices, lowfat cheese, tomato, lettuce, spinach and nonfat mayo on a whole wheat bun. I also got a side salad with lite Italian dressing. It was satisfying; nothing to write home about taste-wise though. It was a good healthy 9 POINT choice compared to some of the other menu items (Kobe sliders!!!!!)...





When we finished lunch, we went bathing suit shopping. While in the dressing room, I experienced severe trauma from which I will not recover without very expensive therapy. Nuf said.




I had the nerve to eat a snack after my shopping experience. It was healthy though, so I guess it's o.k. - Weight Watchers Berries and Cream Yogurt, 1/2 c. blueberries and 1/4 c. Fiber One for 2 POINTS...



More vegetarian-ness...dinner was 2 oz. barbeque baked tofu , 3 oz. sweet potato fries (with ketchup -my new fave!) and a bit of super garlicky spinach (sorry, hubby). A delicious 6 POINT dinner...



And for dessert....BROWNIE!! I wrestled with this one after my traumatic shopping, but these are legal ...



Lyndsay, a Weight Watchers rep, sent these out to me and I couldn't wait to break into them! The box contains 4 individually wrapped brownies with each brownie being 120 calories, 3.5 gr. fat and 4 gr. fiber. Only 2 POINTS and a decent size...



And nice thickness...





But, how do they taste??? Well, let's just say, that I am lucky that only 4 come to a box and that they are individually wrapped! They were chewy squares of goodness with bits of mini chocolate chips throughout. Very satisfying. I chose to eat mine plain tonight, but it would be great topped with whipped topping and strawberries or with a scoop of fat free ice cream. So many options....so little time...


before I have to wear an itsy, bitsy, teeny, weeny........... one piece bathing suit with a turtleneck and long sleeves attached and a cute matching skirt that goes to my ankles :(

I like your hummus filled egg white idea. Must try it out. BTW, I tried SHRED level one and it kicked my butt. I looked through it once before I started and it looked VERY easy. Boy was I wrong. Can't wait to see the results in a month or two.

I remember those eggs because last time you did them I wanted some!!!

I got a chuckle out of your bathing suit shopping experience. Personally I don't think bath suits were made to be worn in public!! LOL

The eggs with hummus sounds brilliant. Too bad I can't have eggs. argh.
And that sandwich that you ordered...my gosh hit me up with one of them that looks delicious!
Just wondering do you buy your sweet potato fries or make them yourself?
And I think we all are hard on ourself when it comes to wearing swimwear.
Thank You for the sweet compliment and YES you are right...we have to just keep on keeping on. There is no other alternative!

Sorry about your bathing suit shopping trauma. I've seen a WW leader actually break down in tears talking about a dressing room experience that happened years ago.

theskinnyplate - Jillian and I had a love/hate relationship! It does rock! I did a February Shred challenge and ended up losing 4 1/2 inches in about 26 days!

Kari - I do make my own sweet potato "fries". Still haven't gotten them to be crispy, but I tried soaking them in water this time, to remove some of the starch and they definitely crisped up better than usual! So good with ketchup!

Jen, a priorfatgirl - the brownies are a good size (about 1 3/4 inch square and 3/4 inch thick)! I'm going to try heating them up a bit next time ...mmmmm

Amanda - join our 'no bathing suit in public' movement!!! LOL!!! We may end up freeing women all over the world!!!!!!!!
Sorry about the hummus eggs:( I am a deviled egg lover, but I think I like these better now!

I love veggie sandwiches! Panera has a one that makes me drool. Mmmm. And you quote about swimsuit shopping had me laughing out loud! We're headed to Hawaii this summer, and I'm already dreading it. I need a tummy tuck so bad. Why can't the apron of skin hanging off my midsection be fashionable?

Ive been staying away from meat on fridays for lent, and its really kind of fun tryign to come up with recipe ideas. i like it!!
