I Dance For Food

Another gorgeous day!  This is turning out to be a great fall!

I was out the door early getting the daughters off to school and had every intention of heading to the gym, but took one look at my “to do” list and decided to get started on that instead.  I decided to keep my running training schedule to every other week for now and technically, today is a rest day, so I tried not to feel too badly about it!  “Running” errands is exercise, right?!

Before racing out the door, I grabbed a Triple Berry Bran Muffin

Honestly, I didn’t like these so much today.  They are nice and moist, but there seems to be a bitter spice in there somewhere.  I can’t put my finger on it.  I didn’t detect it yesterday, but I ate it steaming from the oven.  Hmmm…

Then I was off  to conquer the grocery shopping which ultimately takes up half the day!  Not only was I shopping for our family, but I also had a list of things to buy to donate to needy families for Thanksgiving.  My cart was F U L L!

I stopped home to unload and dig up some lunch.  I heated up a serving of Black Bean Soup from the freezer…

And made a nice toasty crostini with 7 grain bread, a wedge of Laughing Cow Light Cheese and one of my favorite toppings…

After more errands and picking up the daughters, it was time to settle in for homework and a snack.  I was really hungry…

I have seen this all over the blogosphere since I began blogging last year!  I have heard the oooh’s and aaaah’s of bloggers around the world singing it’s praises, so you can imagine how excited I was to come across this in my local Fresh Market!  I was doing the happy dance in the aisle.  Ridiculous, I know.  I need a bumper sticker that says, I Dance For Food :)

I danced, dug and spread it on a little banana and (wait for it)….

It was just okay! Barney Butter lovers might think I’m nuts -no pun intended :)- but I like my Homemade Almond Butter much better!  I am now the proud owner of a $9.50 jar of Barney Butter that is just ‘meh’.  *random dancing comes to screeching halt* :|

Dinner was a “cook like Mom and Gram” recipe – Chicken with Potatoes and Olives.  My Mom and Gram are so good at whipping up dishes without following a recipe;  just a little of this and a little of that.  I don’t always have the confidence to do that, but I think my skills are getting better as time goes on and if I have a basic idea of what I want something to taste like, I can pretty much wing it!

Chicken with Potatoes and Olives

  • 8 boneless, skinless chicken thighs
  • 2 cloves minced garlic
  • 2 tsp. olive oil
  • 2 tbsp. tomato paste
  • 2 cans (14 oz. each) petite diced tomatoes
  • 1/3 c. dry red wine
  • 2 medium potatoes, peeled and diced
  • 1/4 c. sicilian green olives

Season chicken with salt and pepper. Heat a large pot over medium heat, spray with cooking spray and add chicken.  Brown on both sides and remove from pot onto a warmed plate. 

Add oil and garlic;  cook about 30 seconds.  Add tomato paste and stir until paste begins to break down.  Add tomatoes, wine and stir until combines.  Add potatoes, olives and return chicken to pan.  Cover and cook on low until chicken is fully cooked about 30 minutes.

Easy peasy…

Fast + Slow

I had to keep myself busy this morning to take my mind off food!  I had to fast for an ultrasound appointment (just some stomach troubles getting checked out) and it wasn’t until 11:oo a.m. !Funny, when I’m told I can’t eat, all I want to do IS eat!  Finally, the time came and I raced to get to the appointment.  It was over  pretty quickly and I daydreamed about lunch the whole way home!  Sheesh!  Obviously, one of those “detox” fasts are not in my future!

Lunch had to be quick to appease my growling stomach.  I decided on a wrap made with turkey, a Laughing Cow Light cheese wedge, spinach and Trader Joe’s Roasted Pepper and Artichoke Tapenade.  It was all rolled up in a Joseph’s Lavash Bread and served with a ginormous pear and some Kettle Baked Potato Chips

This was one of my best wraps, yet!  I loved all the flavors.  I noticed that food tastes extra good when you’re starving!  But, I made a conscious effort to put on the brakes and eat nice and slow:)

The afternoon flew by with errands and the remainder of the evening was spent at little daughter’s religion class – this time big daughter and I both got wrangled to help out!

I wasn’t into a big dinner when we got home, so I heated up some Trader Joe’s Organic Lentil Soup along with some cornbread I had in the freezer.  I took 55 pictures of this, but there is just no way to make lentil soup look pretty!

In the interest of full disclosure, I did steal a few big spoonfuls of the daughters’ mac and cheese, too!  It was too good to let it slip by without a taste :)

Overall, it was a light eating day, but I ate enough filling foods to feel satisfied.  I did manage to end with a little something sweet, though…

ONE GOOD THING:  I took the time to enjoy all the flavors of my lunch.  Sometimes, if I’m overly hungry, I wolf the food done without tasting it!  This time, I savored each bite so that I would be satisfied when I was finished.

Shaking In My Sneakers

I am freaking out a little.  I did something that I’m not sure I should have and I’m really nervous.  But, part of me is super excited.  Oh, sorry.  I guess I should spill it… I signed up for my first 5K race!  *insert collective screaming*  I know!!!  This is a huge deal for me.  I have wanted to do one for a long time, but wasn’t sure if I could with my hip issue and all.  But, it has calmed down a lot and the doc said if I pre-medicate with some Advil before the run, I should be fine.  I just feel like I have to do it.  I have to show myself that I can, push myself out of my comfort zone and cross this sucker off my bucket list.  So, I did it.  The date is October 17.  I will be totally flipping out the day before, so mark your calendars to come back for the entertainment!  More to come…

Needless to say, I was itching to get to the gym and run on the treadmill.  I fueled up before leaving with half of a banana (is it me, or does this look kinda pervie ?)…

I got to the gym, headed straight to the treadmill and huffed out a 3.1 mile run in no time flat.  Not really.  It took me 50 minutes!  50!  That is sucky, I think.  Will all the other racers be yawning and waiting at the finish line for me???  Aaaah!

It was errands galore after that.  Thankfully, I brought an after-run snack in the car.  Banana Walnut Breakfast Cookies are yummy.  Recipe to come in Jen’s e-cookbook

I finally made it home for a late lunch.  I made up Salmon Toasts with 2 slices of Trader Joe’s Organic Spelt Bread, a slice of Laughing Cow Light Cheese and smoked salmon.  YUM-O…

And had a nice little side salad with Kraft Light Cucumber Ranch (not as good as the Three Cheese Ranch)…

Since I ate so late, I didn’t feel the need for a snack.  I made it to dinner without incident, even though I made No Pudge Brownies while the daughters were doing homework :)

I was on my own for dinner, so to speak.  The husband was working late and the daughters were thrilled with mac and cheese.  I was still in a fishy mood, so I dug out some shrimp from the freezer.  I had some zucchini that was calling my name, so I paired them together for  Shrimp and Zucchini with Tomatoes and Feta.  Couldn’t be easier.  I cooked shrimp in a skillet with a teaspoon of evoo and garlic – did you know you can cook shrimp frozen?  No need to thaw.  Just saute in a skillet until done.  When cooking from frozen it makes it easier to not overcook it.  No rubbery shrimp is a good thing!  After shrimp was cooked, I removed them from the skillet and set aside.  Then,  added the zucchini and cooked until golden.  I added the halved grape tomatoes at the end and put the shrimp back to warm through.  Topped it off with reduced fat feta cheese.  It was awesome…

Here’s my 10 things…snore…

1.  My whole life, people have mispronounced my name.  My name is said Ma-ree-sa, but everyone says, Ma-riss-sa.  it’s frustrating!  I’ve tried correcting people, but they still say it wrong.  Now, I just answer to anything as long as it’s not a curse word.

2.  BK (before kids), I had 2 successful and completely different careers.  After college, I became a paralegal for a senior partner in a large law firm.  Three years in, he encouraged me to go to law school.  As I was taking my LSAT’s, I had a change of heart.  I came home from the exam and told my parents I was going to beauty school!  I went on to open and operate a nail and skin care salon for 6 years.

3.  When I was 23, my brother(20) was killed in a car accident.  He was my only sibling.  It devastated me and my family for a long time.  The pain of his death has lessened for me over the years and I am able to think of him with a happy heart now.

4.  I met my husband on a blind date.  He was so silly, but intense and very loving.  I couldn’t help but fall in love.  He had me at hello:)

5.  I got pregnant with our first child (big daughter) 9 months into our marriage.  It was an easy pregnancy and birth.  She was and still is a dream!

6.  When big daughter was 18 months old, I became pregnant again, however, it resulted in a devastating miscarriage.  I had 4 more miscarriages before finally giving birth to little daughter 4 years later.

7.  Twelve hours after little daughter was born, she was transported to a children’s hospital for emergency intestinal surgery.  Recovery was long and hard, requiring a 3 month hospital stay in a surgical NICU.  The husband and I still have mental scars from that time, but we learned the value of family, health and prayer.

8.  I am petrified of public speaking.  Anytime, I’ve had to do it (i.e. oral reports/presentations), I sound like I’m hyperventilating when I talk.  So pathetic!

9.  I am extremely close to my family and in-laws.  They mean the world to me and as crazy as they are, I couldn’t live without them.

10.  My career for the past 11 years has been Child Rearing Specialist (aka stay-at-home mom).  It’s a great job, but pays diddly and frankly, I should have been fired a long time ago.  And believe me, they’ve tried ;P

Paint + Date

Hey guys!  Sorry for this fly-by post;  I have lots to get done to put Humpty Dumpty the kitchen back together again!

The husband and I sent the daughters off to my parents for an overnight stay so that we could paint without interruption.  It was a work day for sure!  We started bright and early and didn’t finish up until nearly 6:00 p.m.  I made sure to start off with a yummy breakfast.  My Mom gave me some of her homemade fig jam made from the fresh figs in her garden and I was looking forward to trying it out…

I spread some on 2 slices of toasted Trader Joe’s Organic Spelt Bread with a wedge of Laughing Cow Light Cheese.  It was delicious!

The husband painted away in the kitchen, while I taped and painted trim/doors in various parts of the house.  Time flew by!  Before we knew it, our stomach were screaming for food.  I decided to just make a quick wrap with turkey, avocado and baby spinach on a Joseph’s Lavash Bread .  I knew the wrap needed some condiment, so I dug around the fridge (which was in the middle of my kitchen!) and found some of this …

That made it!  It was a yummy addition.  I rounded out the lunch with some POPchips crumbs and a juicy pear…

Then, it was back to the grind.  The husband finished off the kitchen and I finished off the last of my downstairs trim and cleaned up our painting supplies while hobbling around.  Back breaking work, but well worth the effort!  We finally decided it was quittin’ time, showered and headed out for a little dinner date to a local sports bar.

We celebrated our hard work with a nice, cold one…

We also ordered dinner.  I went with the Lemon Pepper Salmon Salad with citrus vinagrette.  It was delish and I ate most of it.  I was really craving some greens!

Heart attacks on plates.  He’s a hopeless cause!  More frustrating, he’ll probably wake up and have lost 2 lbs.!!!

We headed home and plopped in bed for a good night’s rest.  Got much more to do before the daughters get home, but we’re close.  Here’s a sneak peek…

Baby Steps

Toward the end of my superfunk, I started to feel at my wit's end with respect to how to go about losing the rest of this weight. I tried to get back to my Weight Watchers roots, everyday, pulling out my journal, ready to write down everything I ate and count up the POINTS. This had always been my "ace in the hole". Accountability in this way was key for me and I knew that anytime I wasn't journaling, I was most likely straying from the program. But, as hard as I tried to go back to the tools that I alway relied on, it wasn't working for me. I couldn't get a handle on it. Then, I thought I would try out the "non-counting" alternative of the Weight Watchers program (Momentum), but, again, there was that list of foods to choose from. I felt so lost and anxious. I knew I had to get my eating under control and back on track, but the insecurity I was feeling was overwhelming me.

After much reflection, I decided to let myself trust. Trust that I can make healthy food choices, trust that I can eat enough to make me feel satisfied, trust my body to give me the right cues and trust that I won't eat a pan of brownies because I "shouldn't" have had them to begin with. Trust that no foods should be off limits, IF I TRULY wanted them.

I started out last Tuesday with this new process. I knew this would not be an overnight epiphany. Baby steps. That's what I kept reminding myself everyday. It will take some time to undo a lifetime of The Dieting Mind, but so far my body is responding well and my mind feels liberated.



Bread + Cheese

It was way hot this morning. Too hot for an outdoor run. I hit the treadmill and planned on running 30 minutes, but got into such a good groove, I pushed it to 40 minutes. I could've run longer, but the daughters were clamoring for some breakfast!

I made myself a slice of Trader Joe's Organic Spelt Bread topped with a wedge of Laughing Cow Light and a beautious plum ...


Then, the daughters and I hopped in the car, cranked up the AC and headed out to forage for some school supplies. We all became hungry and cranky (lots of "Ouch - Quit It's and "She's Stepping, Poking, Talking to Me's"). Ugh. I needed food! I decided to use up some of the leftover salad from last night's dinner. I added some sauteed shrimp, put it over some baby spinach and topped it with a sprinkle of parmesan. I loved all the tastes...

Even though this salad was filling, I still felt like I wanted something. I sat for a bit, to see if it would pass. I think I made it to the halfway mark and decided that I would take a small handful of cheese crackers...


But, I only ended up eating half the handful. As I was eating them, I enjoyed the first few, then realized that I didn't need anymore, so I put the rest back! Whoa, that has never happened before! A small step showing that if you listen, your bod will let you know when it's had enough.
The rest of the afternoon was a joyous event of grocery shopping with the cranky people. Is it September, yet???? We got home late in the afternoon and I was feeling hungry. I thought maybe I should wait until dinner, but my stomach did not agree. I was cutting a loaf of bread to freeze and decided to have a small slice with a bit of sharp cheddar, mmmmmm...


I made up an iced coffee to get me through the rest of the afternoon with the cranky people...




I planned on grilled burgers for dinner; something we all like. I especially love this ground beef from Trader Joe's. It's 96% lean (150 cal. and 5 gr. fat for 4 oz.) and is a great price @ $3.99 lb.!



I made plain burgers for the daughters, but decided to play up mine a bit. I stuffed mine with a slice of Asiago cheese ,sauteed baby bella mushrooms and onion. They grilled up perfectly! I put it on a Pepperidge Farms Deli Flat and topped it with some baby spinach. Gram's green beans were a great side...

So good...

I did a little dessert tonight, too. I'll admit this was an impulse eat. I definitely wasn't hungry; dinner was really good enough. But, the daughters wanted to make chocolate chip banana bread and when it was done, I felt the old dieting feelings making their way to the surface..Should I, Shouldn't I? I decided it was okay. It's okay to eat banana bread. Not the whole bread, to get rid of it so you'll never have to deal with it again. Just enough to feel satisfied. So, I ate a piece...

And it was great and that was that. I don't have to worry all night long that there is still a loaf down in the kitchen or conjure up different "hiding" spots so that I can try to forget that it is there. I know I can have a piece if I want and it's okay. And knowing that makes me think I don't really want it so much anymore. Baby steps =)

The Fat Fest Begins

It was a beautiful morning! I took Rocky (our dog) for a 2 mile walk with a quick pit-stop for some fresh bagels. I put a whole wheat one to work for breakfast, topped with a wedge of Laughing Cow Light and 1 oz. smoked salmon...
Then, it was time to pack up and head to the beach. For lunch, I made up a Chicken BLT Salad using 2 oz. roasted chicken, 2 slices center cut bacon, romaine, tomato and light ranch for 5 POINTS...

Along with it, I packed one of these new crackers...


This was a dud. First, the ingredient list is a mile long with lots of bad-for-you ingredients like partially hydrogenated oils, corn syrup and a really funky one called resistant corn maltodextrin. I have no idea what that is, but it doesn't sound good! Secondly, it had a fake cheesy flavor; very artificial. Lastly, it is way too POINTy for a cracker. Each filled cracker is 130 calories, 7 grams fat and 3 grams fiber which comes in at 3 POINTS. Not worth it...

After my unsatisfying cracker, I dove into these peanut butter filled pretzels...

Yes, dove ...head first. Drowned myself in them. Handfuls were eaten with reckless abandon:( Boo!!!
After lots of ocean play, I waddled home from the beach and got ready to go to dinner. We decided on a Mexican restaurant that we haven't tried yet called La Hacienda.
Our friendly server started us off with a plate of their house tortilla chips...
and salsa...



I had a small plate ...

The husband and I decided to 'live it up' with some margaritas. I chose the Mango Margarita and it was divine...

The husband ordered Nachos Grande with beef for an appetizer. It was soooo good. I had a plate... kill me now...



I should have stopped there, but I had already ordered my entree, a Vegetarian Burrito. It came with the most wonderful chicken soup. It was made with shredded chicken, rice, potato and carrots. The broth was amazing. I had a few spoonfuls, then shared the rest with the daughters...



While waiting for the entrees, little daughter snapped this picture of the husband and I before we fell into our fat-laden coma...


The entrees came out. Kill me again...


The veggie burrito was the size of my arm. Okay, not that big , but big enough! I ate half. I have no idea why. I was stuffed and past the point of even tasting anything anymore. I asked our friendly server to take it away and box up my remaining dinner. We sat at the table for a while after, basically unable to move due to a fat induced stupor.
We finally peeled ourselves off the chairs and headed home. I will sleep like a log tonight. I am looking forward to a bike ride in the morning. I may have to pump up the tires a bit more ;P
