Trying something different...

I have never been a fan of oatmeal for breakfast. Yeah, yeah, I know it's good for me, lowers cholesterol, heart-healthy and all that. But, I have a hard time getting past the consistency of it. In the spirit of getting myself healthy, I decided to revisit oatmeal -my way. Which means, majorly doctored up!! I have been hooked on this caramel dip from LIGHTHOUSE since October. It comes in individual containers (6 to a package)and they are only 1 pt. each! Great with an apple, so I thought why not add this to my oatmeal...







And so, my recipe for Caramel Apple Oatmeal was born...

  • 1/2 c. rolled oats
  • 1 c. water
  • 1 tbsp. unsweetened applesauce
  • 1/2 of an apple, chopped
  • 1/2 container of LIGHTHOUSE Reduced Sugar Caramel Dip

I cooked the oats with the water, applesauce and chopped apple in the microwave for 5 minutes. Then stirred in the caramel dip at the end. It was yummy and filling. I would have like a couple tablespoons of granola on top for extra crunch, but I try to keep my breakfasts at 3 pts. or less, so I controlled my urge to crunch it up!


Now I can honestly say, "Give oats a try!"

I have a love hate "relationship" with oatmeal. Reading about your breakfast prompted me to have oatmeal this morning, not the packets but the minute Oatmeal. I only doctored it up with raisins, but that did the trick and I was full. Avoided the waffle with butter and syrup breakfast which my family indulged in. Thanks for the inspiration.
