On The Run

Eat and run. That was lunch today and probably will be until Christmas. I ran to the grocery store this morning, stopped home to drop off the stuff but, I did make time to throw together a quick lunch while I was putting things away. I don't normally like to eat like this; all the experts say to sit and "eat mindfully", but sometimes you just gotta fly! So, I chomped down a Ham, Brie and Spinach Wrap. I used 2 oz. honey ham, 1 oz. light brie, handful of baby spinach and a squirt of cranberry honey mustard all rolled in a 1 pt. tortilla (which my supermarket is no longer carrying so I'll need to search for a replacement-boo hoo). I was also able to shovel in a serving of Kettle Baked Potato Chips and a plum. It was a 7 pt. blur...

While I was at the grocery store, I found these guys- Kashi TLC Roasted Garlic and Thyme Crackers! I was looking forward to trying these because they looked like they would be BIG crackers. I was not disappointed; each cracker is about the size of my palm! A serving is 4 crackers for 130 cal., 4.5 gr. fat and 3 fiber...

I had 2 crackers spread with a wedge of Laughing Cow Light Cheese and a sliced pear...

Wine would have gone nicely with this! Not feasible during the day, but a nice thought:)

Hi Marisa,
What is Brie? I'm guessing some kind of cheese.

Definitely jealous of those crackers! We don't have those in Canada!

Margie- Yes, it is a wonderful soft cow's milk cheese. It has a white rind on it that many people do eat, but I like to cut it off.
For a special occassion, try 'baked brie'. It is brie baked in a pastry crust -oh my goodness -heavenly!
